做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖(gài )焖。
