做法:洗净宰好鲫鱼(yú ),洗(xǐ )净淮(huái )山和薏米(mǐ )。用清水把(bǎ )陈皮泡软(ruǎn ),拍裂(liè )一(yī )小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油(yóu ),待(dài )油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小火煲一个半小时(shí ),下盐(yán )调(diào )味即可(kě )品尝。
