做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在(zài )锅上(shàng )擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至(zhì )微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放(fàng )入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小火(huǒ )煲一个半小时(shí ),下(xià )盐调(diào )味即可品尝。
