做法:春(chūn )笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
