做法:洗净宰好鲫(jì )鱼(yú ),洗净淮山(shān )和(hé )薏米。用清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好(hǎo )的鲫鱼(yú )和其他材(cái )料,武(wǔ )火煮沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
