做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖(gài )焖。
