做法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅(guō )盖大(dà )火煮开后(hòu )转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
