做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半(bàn )掩(yǎn )住春(chūn )笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转中火。煮(zhǔ )到水快熬(áo )干的(de )时(shí )候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
