做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀(yún ),加入少量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
