做法:春笋切成片后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻(fān )炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加入盐(yán ),翻炒(chǎo )均匀稍收汁(zhī )时(shí )盖上锅盖焖。
