做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水把陈皮泡(pào )软,拍(pāi )裂一(yī )小块姜,热锅(guō ),用(yòng )姜块在(zài )锅上擦(cā )一遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入(rù )煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转中(zhōng )小火(huǒ )煲一(yī )个半小(xiǎo )时,下盐调味即(jí )可品尝。
