做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干(gàn )的(de )时候加入盐(yán ),翻炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅(guō )盖焖。
