做法:春笋切(qiē )成片(piàn )后加少(shǎo )许盐(yán )捞出(chū )后用清(qīng )水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
