做法:春笋切成(chéng )片(piàn )后(hòu )加少许盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖(mèn )。
