做(zuò )法:春笋(sǔn )切成(chéng )片后加少许(xǔ )盐捞出后(hòu )用(yòng )清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时盖上(shàng )锅盖焖(mèn )。
