做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮(pí )泡软,拍裂一小块姜,热锅(guō ),用姜块在锅(guō )上擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里(lǐ )的清(qīng )水,放入煎煮好的鲫(jì )鱼(yú )和(hé )其他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小(xiǎo )时,下盐调味即可品尝。
