做法:春笋切成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右(yòu )。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮(zhǔ )开(kāi )后转(zhuǎn )中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
