做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水(shuǐ )把(bǎ )陈皮泡软,拍裂(liè )一小(xiǎo )块姜,热(rè )锅,用(yòng )姜块在锅上擦一(yī )遍,放两勺油,待(dài )油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼(yú )和(hé )其他材料,武火煮沸,转中小(xiǎo )火煲(bāo )一个半小时,下盐调味即可(kě )品尝。
