做法:春笋(sǔn )切成片(piàn )后加少(shǎo )许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开(kāi )后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
