做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅(guō )盖大(dà )火煮开后(hòu )转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
