做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成(chéng )段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的(de )时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
