做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住(zhù )春(chūn )笋,盖上(shàng )锅(guō )盖大火煮开(kāi )后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
