做法:洗净宰好(hǎo )鲫鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两(liǎng )勺油,待(dài )油六成热(rè )下(xià )鱼,煎至微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武(wǔ )火煮沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
