做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
