做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少(shǎo )量清(qīng )水半掩(yǎn )住春笋,盖(gài )上锅盖(gài )大(dà )火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀(yún )稍收汁(zhī )时盖上锅(guō )盖焖。
