做法(fǎ ):洗净宰(zǎi )好鲫(jì )鱼,洗(xǐ )净淮(huái )山和薏(yì )米(mǐ )。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅(guō ),用姜块在锅上(shàng )擦一遍,放(fàng )两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中小火(huǒ )煲一个半(bàn )小时,下盐调味即可品尝。
