做(zuò )法:春笋切(qiē )成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半(bàn )掩住春(chūn )笋(sǔn ),盖(gài )上锅(guō )盖大火煮开(kāi )后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
