做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清(qīng )水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在(zài )锅上(shàng )擦一遍,放(fàng )两(liǎng )勺油(yóu ),待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的(de )鲫鱼和其他(tā )材料(liào ),武火煮沸,转中(zhōng )小火煲一个(gè )半小(xiǎo )时,下盐调味即可品尝。
