做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加(jiā )入盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时盖(gài )上锅盖焖。
