做法:洗净宰(zǎi )好鲫(jì )鱼(yú ),洗(xǐ )净淮山和薏(yì )米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在(zài )锅上擦(cā )一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水,放(fàng )入(rù )煎煮好的鲫鱼和(hé )其他(tā )材料,武火煮(zhǔ )沸,转中小火煲一(yī )个半小时(shí ),下盐调味即可品尝。
