做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在锅(guō )上擦一(yī )遍(biàn ),放两勺油,待油六成(chéng )热下鱼(yú ),煎至(zhì )微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和(hé )其他材料(liào ),武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半小时,下盐调味即可品尝。
