做法:春笋切成片后(hòu )加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬干的(de )时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
