做法:春笋切成(chéng )片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
