做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻(fān )炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
