做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀(yún ),加(jiā )入(rù )少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
