做法:春笋切(qiē )成(chéng )片(piàn )后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖(gài )焖。
