做(zuò )法:春笋切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬(áo )干的(de )时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
