做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍收(shōu )汁(zhī )时盖上锅(guō )盖焖。
