做法:春笋切成(chéng )片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左(zuǒ )右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入(rù )少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
