做(zuò )法:春笋切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半(bàn )掩住春(chūn )笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖(gài )焖。
