做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖(gài )上锅(guō )盖焖。
